A human. In the morning, he is a baby, so he walks on all four limbs. In the afternoon, he's a grown man, so he walks on two legs. In the evening, he's an old man who must use a cane.
This is known as the "Riddle of the Sphinx," from the Greek tale/play of Oedipus Rex. Oedipus answered the riddle correctly and angered the Sphinx into destroying itself, thereby gaining passage into Thebes.
(Most elderly people use walkers now, though, so in a modern version on the riddle, the the old man might have six legs, lol.)

As an infant man crawls on 4 legs (morning), as an adult we walk on 2 legs (afternoon), and as an old man/woman we walk with a cane, which would be the 3rd leg (evening).
