It's kind of an old one--"Passion", which is Peter Gabriel's music composed for "The Last Temptation of Christ." He worked with a lot of Middle Eastern artists and traditional musicians (there was also a CD with the source materials he used for inspiration), so it definitely has an authentic feel.
It's great music, and if you know the story of Christ and his crucifixion, you don't even have to see the film to follow along with the music--it sort of tells the story itself.
I listen to it all the time, but on Easter, I make my family listen to it, as well, during dinner.
If you're talking about soundtracks with actual songs you can sing along with, then my favorite is the one from "Toys." It has a nice mix of instrumentals and some really great songs, including one by Grace Jones (I know--she has a weird voice) that is absolutely lovely.

There are a lot of good ones with solid rock tunes- like Drugstore Cowboy, but (and I know this is lame) I love the Footloose soundtrack. I am OBVIOUSLY a product of the 80's.
