soda is carbonic acid H2CO3 ,alcohol is C2H5OH and there is water..excess.

this will only result in the production of carbondioxide and water where also a small proportion might give an ester methyl acetate, which makes it smelling pleasant.

(acid+alcohol=ester)

There is no 'reaction', the liquid simply becomes a mixture. There is no dilution of the alcohol (an old myth) although the conglomerate drink becomes effervescent in it's totality.

Nothing at all, if you're referring to sodium bicarbonate. It may neutralize acids in some alcoholic drinks (wine).

However sodium metal does react with pure ethanol to form sodium ethoxide. With dilute ethanol, sodium preferentially and explosively reacts with water to form hydrogen gas and sodium hydroxide.
