I was to cut up some old jeans - should I make them capris or bermudas?

I love both! Depends on the material. If they are jean I would just fold the cuffs and make capris. If they are of a khaki material bermuda would be the way to go!

Capris if you're not going to have them sewn on the hem, that way you can roll them up.

berumdas are in right now...but depending on how tall you are. If you're under like, 5'3, try capris...over would be berumdas
