Apple cider vinegar is made from a "mother" or a concentrated ferment of dead yeast cells and bacteria that have "blown out" their alcohol content. Similiar to proofing yeasted dough for 12 hours to finish the fermentation process. With bread, any proofing less than 12 hours does not lead to finished fermentation and leads to the bread completing its fermentation in the gut. The apple cider "mother" forms as a scum on the fermentation of the apples and provides the "base" for the next batch of vinegar.

Other vinegars such as balsamic are fresh ferments and there isn't any carry over of nutrients, yeast and bacteria from batch to batch which is why apple cider has its reputation as being a healing vinegar.

Have you tried a Yahoo search for "apple cider vinegar" (OR balsamic) + "health benefits"?

Apple cider vinegar works. All, or most other vinegars just give you a yeast infection, or a fungal infection.

It really is a matter of flavor and what you like. You would have to consume so much vinegar your mouth would be in a permanent state of pucker before any kind of vinegar would make a health difference.
