Lets say for the sake of Argument that truth changes like a wind......Now, is this statement true? Or is subjected to change? Do you see the contradiction?
If every entity in this universe is undergoing change and every principle or rule is changing, then that itself would be an eternal truth.
So by its very nature, there should be a Truth which is not subjected to change.
The important question therefore is this : Can we find a bit of eternal truth ? Thats an open question. Even if you find it, how would you know for sure that you have found it? Hence its always very important to keep an open mind with the assumtion that there are always new things to be learned and discovered.

There is one reality, but every person sees the reality through his or her own perception, that which we call the truth. So there are many truths, but only one reality.
a Quest is usually a journey towards knowing something... The more we become aware of our quest, the more we become aware of reality, how ever reality is still filtered through our perceptions, ideas thoughts and so on.

There is always more than one truth. The truth I know, the truth I don't know yet, the truth that I will never know and the truth that someone else knows. It doesn't change like the wind, it's more like layers that I peel off as I go.

For me personally, there is one truth, my feeble understanding of things around me in any endeavor ... but that truth is not constant. It evolves. Truth is a function of perspective and as long as I'm breathing and keeping an open mind, my understanding of the truth will change.
Thanks for the thought provoking question.

you would be the constant - and you alone - with every action there is a reaction - every step you take is a choice made with reprecussions - even the slightest difference makes for another set of choices - and each with its own truth - you alone are the one constant - your SELF.
