I definitely agree on "The Notebook".
Also for something different:
"The Divine Secrets of the Ya-Ya Sisterhood"
"Uptown Girls" (I always cry at the ending)
"Pretty Woman"
"Fried Green Tomatoes"
"Beaches" (w/ Bette Midler)
and technically not a chick flick.. but the master tearjerker & one of my FAVORITE movies....
"Life is Beautiful" (dealing with one father's attempt to shield his son of the horrors of the Holocaust) Amazing film

There are so many to choose from, but if you are brave enough to watch a film made over 50 years ago then it has to be "A Matter of Life and Death" It is beautiful, magical and achingly romantic. It's about a RAF pilot whose plane is about to crash in the English channel on it's way back from a bombing mission. All his crew are dead and he knows the plane is going to go down and there's no parachute. He says goodbye to everyone he loves to an American radio operator and she thinks that's that. But his "heavenly guide" misses him in the fog and he remains alive when he should be dead. He meets the radio operator and they fall in love, but then he is put on trial for his life...
You won't regret watching this film. Give it a chance.
