The himalayan mountains formed when the continent of India collided with southwest asia and the land was pushed upward into what is probably the youngest mountain range on earth. Because of its young age, the mountains are very high, and in fact continue to increase in height, because the Indian collision is not completely finished.
The major effect the himalayas have is the rain "shadow" they cast across southwestern China and western Eurasia. The gobi desert results from the fact warm moist air from the Indian ocean is blocked by the himalayas from reaching inland China. The great plains of the western united states result from the rocky mountains behaving the same way. However, the gulf of Mexico is unimpeded and as one travels east, the rainfall increases. Eastern north america is technically a temperate rainforest. However, the gobi region is thousands of miles from the sea and also a plateau because of the influence of the rising himalayas. This makes the gobi desert one of the driest places on earth.
The monsoon is a cyclical wet/dry weather pattern which develops in the southwestern pacific ocean. It is influenced by the himilayas because warm moist air from the indian ocean has to push its way into central and northern india and is blocked by the himilayas. This is why the monsoon begins in southern India and Bangladeesh first and slowly travels into northern India.

The Himalayas in India obstruct and deflect the southwest monsoon winds during the period June to September bringing heavy rain to the north and northeast India . A stretch of more than 1500 Kms along the southern side of the mountain are benefitted by it.The ganges, the Brahmaputra and the Indus rivers are fed by the ice and snow formed over the Himalayas.Further the cold winds from north are blocked by it during the winter preventing the extereme cold conditions in North India. It acts as a natural boundary between India and China. The highest mountain Mt Everest is situated on the Himalayas.Among the biggest mountains in the world ,this is considered to be the youngest, still continuing to grow.

The Himalaya mountains are so tall they affect the jet stream, and that determines weather patterns for much of the rest of the world.
In spiritual terms, being the highest area on earth, they also are home to high spirits. That is why you find the Dali Lama coming from there, and the Tibetan writings.

Off the top of my head - and possibly in order of importance:
They are responsible for modifying the weather in the near east and central asia - and to a lesser extent they influence global weather patterns by modifying the sub-tropical jet stream.
The Himalayas are directly responsible for creating the well known "monsoon" of India and bangladesh.
They provide idiots with the ability to slowly kill themselves while climbing their peaks.
They are the birthplace and cultural center for Buddhism.
They provide a geographic barrier large enough that China has to think twice before trying to annex Bhutan, Nepal, India and anything else it decides it wants.
The Himalaya provide adequate cover for everyone's favorite cryptoid the YETI.
