Get yourself out into space. You will accelerate according to the net gravitational force on you. There is no test you could make that could tell you whether you are in 'free fall' or whether there is no gravitational field. This is relativity's principle of equivalence. There is no known shield against gravity. We counteract gravity by using other forces.

That's the science. If you mean levitation by its common usage, you are now talking science fiction. In that case, it works by whatever principle the fiction writer says it works.
