I know how it works; it increases surface area and allows more neurons in less space, but why is an efficient method like this necessary? I mean, how is this an advantage? Why don't we just have big heads?

Think of the balance thing. As we evolved into bipedal beings, it would have been very difficult for a large headed being to be stable.

evolution to bipedalism reduced the amount of surface area exposed to the sun compared to quadrupeds. If our heads became larger that would defeat the whole purpose.

Birth canal. Also, the fat head we have takes 20% of our total energy outlay. I could go on for some time about this, but others will add reasons.

Larger heads would be a disservice to the makers of caps and hats. It would force them to use more material for those head coverings and would thus reduce the green-ness of the earth.
