Gas and only gas especially if you like to cook. Electric heat cannot be properly controlled like gas and it isn't as even.

That is completely a matter of preference.
I like gas because the heat seems to be more constant where electric never seems to be. However, having said that, I currently own an electric flat top stove and I would not trade it for the world. Clean up is so easy compared to traditional gas or electric stoves that I'd rather cook on it than a gas any day. It's just what you prefer and what is most convenient in your life.

Gas. I have never seen an electric cook top in a restaurant. Or ever seen a chef use one. I have heard that electric ovens bake better, not sure if it is true or not. So I guess it depends if you are a baker or use the cook top more. Maybe get a separate cook top and oven?
Do you have both gas and electric hookups? Added expense to have either a gas line or an electric stove outlet put in!

After working in a commercial kitchen with a 12 burner gas range for 6 years and then moving into a house with a little 4 burner electric I can honestly say that I wish I had gas... :) I am especially fond of the type of stoves that are gas range with an electric convection oven. Even if you have to run the gas lines, in my opinion it is well worth it. Oh and invest in some copper clad stainless steel cookware (like Revere ware) it too is worth the money.

I think you should get an electric one. Gas stoves are dangerous, they can blow up, it is really easy to get burned and they can start fires. Electric ones are alot easier to use and they have lights on them to tell you if the surface is hot or not. With gas stoves you have to make sure that your gas line is always working and it is a hassle. Also, carbon monoxide poisioning is another thing that you have to worry about, it can kill you without u even noticing it. Whatever u get, good luck and be safe!

First Question Do you have both power supplies already at the stoves location? If not stick with what you currently have or you will have to run either the electric line or the gas line for the new stove.
I prefer gas myself and most pros use gas I think. But either one works well Just have to learn how to use each.

Any good chef know that gas is the best. The heat is immediate, and there is no residual heat when you turn it off. You can get an indoor grill built in to your stove, etc. And it's less expensive to run than electric.

I prefer gas because electric tends to burn food.
The fire on a gas stove cools faster than an electric stove.
An electric stove may save you money on bills and may be safer if you have children who like to play with fire.

The biggest advantage to gas is that heat changes are immediate. Wen you turn it on, it is instantly as hot as it can be. Just the same, if you turn it down, or off, the heat reduction is immediate. As has been mentioned, gas also tends to be more even and depending on your appliance and utility prices can be more cost effective.
Plus, if you loose power, you can still cook!

I have had both and prefer gas. This might help. Consumer Reports in their may 2007 issue lists the most reliable and most repair prone ranges and cooktops.
Electric Ranges
Most reliable: GE Hotpoint and Whirlpool
