Hi, there are several different colors of string beans, including green green with purple markings, purple, and yellow. I haven't yet seen red!

I grow purple ones because they are easy to find in the bean patch, among all the green leaves, and because I freeze beans. Purple beans turn a deep green when they are cooked. You have to cook beans slightly (blanch) to freeze them. They change color JUST at the point when they are cooked exactly enough to freeze. So they are very easy to freeze since you don't actually have to time them.

Anyhow, they are perfectly normal and taste very much like the green string beans. And you can't buy them in many stores, so it's one of those Cool Things you can grow in your own garden and show to friends.

They're only purple until you cook them.

Then they're ordinary green beans.

You probably got a weird varietal that only looks different while it's growing.

But I read a thing about a woman who wanted purple food, and she grew these purple "green beans" and cooked them...and they looked and tasted like any ordinary green beans.

You should be OK once you cook them. I mean, different varieties have differences, but cook 'em up and you probably won't notice anything different.

Wow that's weird but also an amazing talent. Now if you don't wanna eat something you can put it in your secret compartment. Or if your at a party and want to save a snack for later, you can store it for a nice midnight chowdown at your convenience.

Someone could be playing a trick on you and put blue food dye around the roots of your beans, food dye will change the color of vegetables while growing.

(Watch out! They might be alien pods getting ready to kill you by copying and aborbing you in a hideous, slimy process that destroys your clothes and leaves you naked in your garden with an evil smile on your doppleganger's face...!!! (Doo Wah!))

Also watch out for "strange" rutabaga's, and "bizarre" summer squash...!!!

It's a jungle out there in the garden...
