Each different type of coaster has a different feeling to it. Woodies shake and bounce alot. Steel runs as smooth as flying through the air. I don't know that much about hyper coasters.
The best woody is easily Ghost Rider.
The best steel is Riddler's Revenge.

While I love all coasters, I prefer wood and hypercoasters. I will list a few favorite wood coasters, as my steel list will more than likely change if a trip that I am trying to plan works out.
#1 wood- Voyage-Holiday World
#2- Legend- Holiday World
#3 -Raven-Holiday World
#4 -Beast-King's Island
#5- Texas Giant- Six Flags Over Texas

I like the steel and hyper coasters. I just went to Kings Island a few weeks ago and I rode the Firehawk. VERY intense ride. It is like you are flying. It took me an entire half hour to recover. (and I LOVE rollercoasters). I don't like the wooden coasters. They are too rattly and they give me a headache.

First .. I am SO jealous that you rode El Toro. I'm planning a trip soon, but haven't been there yet. It looks awesome!!! I always have a hard time picking favorites. But I guess it would be:
Voyage or Shivering Timbers (depending on my mood)
Millennium Force
Kingda Ka
