It's pretty easy to take the door knob or dead bolt off and you can see the layer of veneer in the mortise. You may be able to see it near the hinge as well. A softwood, veneered door is usually much lighter in weight as well.

You can usually look on top of the door to see the manufacturers name and see the layers. Hint- most doors are engineered (veneered) nowadays because they'll last longer than a hardwood door without splitting or warping. If you paid for a hardwood door, you'll know it, they're around four times the price of a veneered door.

Remove the lock set. You'll see any edge of veneering around the whole. Also, you'll see the core material.
