Well, because this a pop music reference.
I'm gonna say, according to Dave Matthews Band song "Louisiana Bayou" (I have heard the song a few times cause my bf played it for me).
The coins in their eyes would represent the money they owe.

I guess you could say the person in question is money hungry, especially if you watch old cartoons. But really, it just means that the mortician wants to make sure the embalming job sticks for the viewing, and that no eyes pop open unexpectedly.

It's not coins IN the eyes, it's coins ON the eyes. "They" used to put coins on dead peoples eyes to keep them shut.
