I don't know if anyone has heard of them. Not sure if I can come up with 10...but I'll try! =)
Dog Day Sunrise
STEMM
Liquid Violence
Zero Intent (my band...haha!)
Ball Cheese Psychotics
Counter Offensive
In This Moment
Opiate For The Masses
Skinbound
Dope
Well, a couple of them are becoming kind of popular. So, people might have heard of a few of them. Some aren't together anymore. But, those are the most un-mainstream ones I could come up with! =)

Is this for your top 10 favourites that no one's heard of, or just 10 bands you own that no one's heard of? (You mentioned both.)
1) Morcheeba
2) Yasunori Mitsuda (Chrono Trigger composer)
3) JA Seazer (anime composer)
4) Eccentric Opera
5) Gandharvas
6) Toxic Narcotic
7) Stricken (defunct Vancouver-area band)
8) Michael Jones (Muzak composer)
9) Sinergy (Power metal from Finland)
10) Dukes of Dixieland (Self-explanatory)
Honourable mention goes to a band I've never heard but have wanted to hear since college:
11) She Stole My Beer
And because my fiance had to get in on the action, here's his (more impressive):
1) Bunchofuckingoofs (Toronto Hardcore Punk)
2) The Crumbsuckers (Early NY Hardcore)
3) Bile (Industrial hardcore)
4) DHI (Death and Horror Incorporated) (Industrial Dance)
5) Left-hand Solution (Gothic)
6) JP5 (Turbo Revvin' Rawk Band)
7) AMQA (Apple Maggot Quarantine Area) (Defunct Hardcore/Thrash Indie band from Phoenix, AZ)
8) Screaming Beavers (Hardcore Punk band from Niagara Falls, ON)
9) Extra Hot Sauce (Taco of Death) (NY Hardcore)
10) Tin Machine (with David Bowie)

I can't come up with 10, but here is one:
The Derek Trucks Band
Derek has been playing with Clapton's current tour, playing in the Allman Brothers Band for a few years, but the guitar work on his stuff with his own band is amazing, and yet practically unheard of.
