hair doesn't grow straight out of the skin, it usually grows in one direction or another, shaving against the grain is shaving against the direction of hair growth.

It just means 'against the direction of hair growth'. So if the hairs are growing down ur leg (or face etc.), shave up it :-)

Shaving the opposite way the hair wants to go producing ouch! razor burn. A good example is cutting steak. One way to cut it is easy because you are going with the "grain" and the other way is very tough.

if you are talking about shaving your face then usualy mean to shave upwards from your neck to your cheeks. I find this give a closer shave.I have been shaving this way for 20 years now
