Evidence is what is already known; evidence can include a shell casing in a murder investigation. They know it is a shell casing; fingerprints, ballistic testing, etc., will show it belonged to the person doing the shooting. All of the evidence, objective, circumstantial, whatever, go to prove that John Doe, did, in fact, on the 8th instant, commit first degree murder by shooting his estranged wife.
A total of of all the evidence is taken as proof.

Assuming you meant proof rather than prove, the difference is that proof is actually a large collection of evidence considered to show - or prove - that a position or fact is true.

Proof is a logical conclusion drawn from evidence.

One piece of evidence can constitute proof, when you apply logic ... such as, when "seeing is believing." But "proof" is conclusive, whereas "evidence" is only suggestive.
