There is only one spot you can view the lava flowing in the ocean so you don't really have any options. It's kind of a hike too from where the road ends. Try to go towards dusk b/c the lava is much more spectacular at night. I can't exactly remmeber the name of the spot or how to get there but I'm sure if you do a quick internet search you can find it.

I'd look into a helicopter ride over the southern edge of Volcanoes National Park. It probably would be pretty spectacular, and it would be a safe way of seeing it happen. You wouldn't want to walk around out there.
