Every TV episode I have ever watched of Myth Busters I have noticed that the Liscence plates are always blurred out. Anybody have a good answer for this (I'm sure there's a legal reason for this but I just don't know what it would be)?

To avoid tort (civil) lawsuits for invasion of privacy and public disclosure of private facts. In other words, you can't broadcast someone's personal information without their consent.

Privacy issues. A hacker can possibly get VIN numbers, insurance info, stuff like that off those.

For the same reason why hollywood has its own set of fake pone numbers. They don;t want to expose anyone to unnecessary public exposure for liability reasons.
