It really depends on when you come. If there is a major festival or event taking place, then yes it will be difficult. Of course, if Ft. Walton is booked, look around the area and you are likely to find something. Check Navarre, Pensacola Beach, Destin...

I'm also from the area, and sometimes things are quiet, and sometimes...well, sometimes every place is packed.
It's always best to try and book in advance -- any money you may potentially save by waiting until you show up isn't worth it.
