Bile salts have a large hydrocarbon portion based on the steroid cyclopentanophenanthrene structure. They also have carboxyl COO- or sulfonate SO3- groups. The function is to emulsify fats for digestion. The hydrocarbon portion is compatible with fats, while the polar group renders the whole complex soluble with water.
