Redo the night you proposed.
My husband did that and it was so romantic. Plus he gave me another ring that had all the birthstones of my kids birthdays. It was amazing and sooo romantic.

So many things, really. Plan a special weekend even if your anniversary doesn't fall on a weekend. It doesn't have to be far away, something close by but special that you can have some time alone including a wonderful dinner at a romantic restaurant. If you can't get away, then send the kids off with grandma and grandpa and plan an evening together. Dinner if you want but maybe there is something else the two of you never get to do that would make it romantic. If you can cook, make something she loves and enjoy a candlelit dinner. Remember where and how you met and if possible recreate that. But always remember to pick a beautiful card and an appropriate gift.

Pack a bag for the 2 of you, and take her away somewhere nice for the night as a surprise. If you can pick her up at work, that's the best way to do it.
