Organic matter simply implies organic (usually biological) molecules such as lipids, proteins and carbohydrates etc.

Since saprotrophs feed off dead organisms, it can be assumed that it is the lipids/proteins/carbohydrates from a dead animal or plant.

Organic matter is anything that is carbon based. That includes any plant or animal - anything that is alive. In this sentence, the organic matter is anything that was once alive but now is not- so it could be dead leaves or whatever.

A saprotroph (or saprobe) is an organism that obtains its nutrients from non-living organic matter, usually dead and decaying plant or animal matter, by absorbing soluble organic compounds. Since saprotrophs cannot make food for themselves, they are considered a type of heterotroph. They include many fungi (the rest being parasitic, commensal or mutualistic symbionts), bacteria, and protozoa. Animal scavengers, such as dung beetles, vultures, and a few unusual non-photosynthetic plants are also sometimes referred to as saprotrophs, but are more commonly called saprophages.

Basically, any organic matter that the saprotroph is capable of eating. The saprotroph secretes the enzymes, which break down the indigestible parts of the organic matter, making them suitable for consuption.

A tree is organic matter. You are organic matter. Dirt is organic matter. Anything made of alive, dead, or decomposed lifeforms is organic matter.
