The Green Card proves that you have the right to live and work in the USA. So only those who have a legitimate need to know that you are legal need to take a copy of your Green Card. That includes an employer (especially given recentr legislation which stiffens the penalties for employing illegals) and government agencies - DMV, for instance would need to (depending on state law) verify that you have the right to be in the country. Banks must verify identity but if you can do that without presenting your Green Card (an in-date passport for instance you are free to do so. The bank cannot insist on a Green Card.

Some employers require a copy of driver's license or some other proof that you are working her legally. They are within their rights to request the information, but it can only be put into your personell file and not used for anything else.

Basically, you only show your greencard to your employers to establish that you came here legally and you can work for any employers and that they can copy that for their records. Also you show your greencard with government agencies so you can have transaction with them like I went to DMV they swiped my greencard on a machine so that they can see my information. Other than that don't show your greencard to anybody else.
