The act of breathing? It is called breathing... But the main group of fish known for their ability to extract oxygen from the atmosphere is the Anabatoid group (Bettas and Gouramis).

a couple of fish can do this they are called the labyrinth fish (anabatoids) like gouramis and bettas, but many clarias catfish and snakeheads and lung fish can do this as well.

EDIT: lots of fish also do this to replenish their gas bladder supply

Anabantoids, such as gouramis and bettas can. They are commonly known as labyrinnth fish.

Anabantoids do that. Some Coryadoras do too. I don't know the term used to describe this habit.
