A good question and very difficult to answer. Take the case of the PC from a big company like IBM and an opposite model of Dell. Both have their followers.

Unless all the options have enough volumes, costs are bound to be high. And high volumes and standardisation mostly go together.

In a service industry, personalisation may be a little more easier and meaningful too. Like my food preferences can be fed into my travel plan so that I get the tray meant for me in the flight.
