The shoulders and hams are the prized section of a hog.They are located at the top whereas some less desirable meat is on the bottom.For instance,pig feet & sow belly.
There is another saying about pigs--Everything was used but the squeal.Hogs are butchered and everything is used,some parts are much better than others.

Where did the saying "living high on the hog" come from?

It originated among army enlisted men who received shoulder and leg cuts while officers received the top loin cuts.

it's "living high off the hog" and means eating the meat closer to the head of the hog, which is considered better quality meat and costs more.

not sure where it came from but it means that you are living pretty good compared to most people.
you have better things etc... more money...
