You didn't mention anything about a slow max speed ( max 50mph, wide open) so I take it that there isn't a problem getting up to speed, just that it hesitates from a stop. This eliminates the fuel system as being the problem. The 4.3 L is very picky about its plug gaps. Replace the spark plugs with good quality ones. ( Preferably from the dealer). If this doesn't clear the problem, here's a complete list of possibilities that cause hesitation during acceleration:
- fuel pressure.............. fuel pump / pressure regulator
- spark plug wires ....... arcing, (water test these)
- throttle position sensor........ trips "check engine light"
- intake air temp sensor ..... makes engine run rich/lean
- engine coolant temp sensor. hesitates engine warm only
- dirty fuel injectors ..... pour in bottle of cleaner into gas tank
- oxygen sensor ..... trips "check engine light"
- mass air flow sensor... trips "check engine light"

Have you changed the fuel filter lately? Try doing that and see if the problem persists
