During the "dark" ages, it was considered crass to eat black bread. Only peasants ate the unrefined bread. If you know history, it was the rich and royalty who were fat. It hasn't been until recently (within the last 50 years) that scientists have figured out how worthless all grains are that have had the hull removed - rice, wheat, rye, etc. It isn't that the fiber has been "taken out" along with most of the nutrients, the hulls were originally removed to make them easier to eat. There wasn't exactly good dental hygiene back then so people needed softer foods.

White bread only contains the endosperm of the grain which doesnt contain much, is any fiber, while whole wheat or any other bread that is good for you contains the germ, bran, and endosperm. The bran being where most of the fiber is. White bread is filled with perservatives that arent very good for you. Basically its comes down to how healthly people like their bread.

Because people prefer white, soft, tasteless bread. Many kids won't eat anything else. You can still buy wholemeal bread and you should for your health.
