Awesome Question!!
I have asked myself a thousand times......and all these people have beaten around the bush because they don't want to answer......you aren't giving it to God....what you are doing is sowing a seed into your church! It is a step of faith saying ok I am going to sow into your kingdom because I know you are going to bless me more than you have given to him.......not to sound super religious but....Luke 6:38 (Givve, and it will be given to you. A good measure, pressed down, shaken together and running over, will be poured into your lap. For with the measure you use, it will be measured to you.) and that explains why you should give.
Why do we only give 10% because that is all God asks that we do (Leviticus 27:30; Numbers 18:26; Deuteronomy 14:24; 2 Chronicles 31:5)....he justs ask that you sow into something bigger than yourself before you go out and do anything else.....but you can give as much as you want in an offering to God......
I have been a waitor and you rarely get a 20% tip......and it sucks but thanks to those that tip 20% because I know I do just because I want to bless someone else.

A waiter/waitress gets 20% of a single bill. The church gets 10% of my yearly salary, which is much more.
20% of $ is only $20
If you eat out 2 nights a week with an average bill of $25 that is $1300 a year with a total tip of $260/year.
20% of $175,000 = $35,000
10% of $175,000 = $17.500
I don't tip out anywhere near $17,500 for the entire year.
So the church does get much more.

Because we are giving waiters 20% of the money we have spent on a meal, by convention. Tithing is done from your total income, not what you have spent. Also, we don't actually give God any money. He doesn't need it. We give churches money so they can continue in their community functions. Likewise, waiters could not keep doing what they do if you did not tip them. Instead, they'd have to go to the poor house and get food paid for by some church or another (or the state).

You can give as much as you want to either! God says that the MINIMUM we give HIM is 10%. You can tithe however much you want. Whereas tipping, I rarely go over 20 percent, usually it is between 15-20.

you aren't giving God money, you are giving it to your church. God doesn't need money wait staff does. Wait staff uses it to live on every day. Church only happens on Sunday.

Wait staff never flooded the world and killed all of its inhabitants. Wait staff does not cause earthquakes, hurricanes, tornadoes, drought, disease and famine. Wait staff answer you when you call them.

Because God doesn't have to make a living and you don't reward him for taking good care of you.
