Hi, I'm from Havana, Cuba but I went to Varadero a couple of times when I lived in Santo Suarez, Havana. It has the best beach I've ever seen but the tourism has decreased incredibly over the years and most of the hotels are not the same. However, I am aware there is a four star RIU resort in Varadero called RIU Turquesa. I suggest you look at this, http://www.redtag.ca/cuba/varadero/riuturquesa.php -this page also has other hotels in Varadero listed at the bottom but I recommend you stay at a resort part of a world wide chain like RIU because they'll treat you much better.

Without a doubt Sandals Hicacos, voted third best hotel in Cuba on Tripadvisor.com. The biggest pro is its a couples only resort so no screaming kids running around and no groups of college males running around drunk, drooling over every girl they see. The food was top notch lots of activities, friendly staff. Also it really made me a fan of the smaller resort atmosphere with only 3 story buildings on site. Its a much better appeal than a huge multi-story hotel, aka Blau, with hundreds of people crammed into it. It makes it feel as though your in a big downtown location as opposed to a village, retreat out in the countryside along the beach. Youll pay more money than the other hotels but well worth it. Also Ive found tripcentral.ca is the best place for cheap Cuba tickets from Canada, not many of the other big sites cater to Cuba travellers, expedia.ca, travelocity.ca etc.

You may not find too many people here with experience travelling to Cuba. Are you an American citizen? Do you know it is illeagal for American citizens to travel to Cuba? It can be done thru Canada, or Mexico..but it is still illeagal and few people do it.
