I would suggest you get a book and look through it then compare the fish you like the look of for compatibility and go from there, you'll get loads of suggestions here, but we all have our favorites mine are Amazon fish, I've kept any number of species over time, but some of the suggestions you getting here are not going to be what you want.
The idea of a shovel nose cat in 75 gallon of water has me giggling,
Rift valley Cichlids make a nice display in 75 gallons, Oscars just 2 of them would be a push, but with a sump filtration system you could overload the tank somewhat on both those types.
Tetra's are nice and colourful, but it gets a little busy and you really need something larger to make them shoal. Which means Angels or specializing into Discus (not for the beginner).
Then there's Australasia types rainbow fish which can make a colourful setting.
Planted tanks with Torpedo barbs and some of the small L No's pleco's.
the list is endless. In the UK different shops have different display set ups have a tour if the U.S. is the same of different shops and see what takes your fancy.

"Tropical Fish." Very helpful answer :) I would recommend Tetras, for sure. They're active, small - so you could still fill up your tank, and all of them are very colorful. If you really want to try for something big, and not have to worry about the difficulties of testing water quality, blahblahblah constantly - maybe try creating a Gourami tank? Gourami's aren't HUGE (most maxing out to around 4-5"), but they're still graceful, colorful, and nice to look at. Check out Pearl and Gold Gouramis for the 'normal' sized varieties, and you could also look at Powder Blue and Flame dwarf varieties to mix up the sizes in the tank.

hello. If your looking for big,beautiful fish, i would have to say that Oscar's are one of them.they are very hardy and beautiful. of course a plecostomus.there are many types of pleco's but some of them get big like 12 inches and they help keep your tank clean. also large cat fish like a shovel nose or many others.they to help your tank stay free of excess food and clean the bottom of your tank. here is a site where you can find these fish and more. i get all my angels from here as i am a angelfish breeder. its a auction site made for selling and buying fish, like ebay for fish. heres a link. http://www.aquabid.com i hope i helped.

i have a 5 gallon tank and had 4 female betta fish in it (plus 2 gold mystery snails) they're very bright and colorful and really light up the room

could get: (these are one or the other)
1 oscar
1 green terror
1 jack dempsey
1 jaguar cichlid
1 flowerhorn
2 severums
2 flowerhorns (male and female)
2 convicts (male and female) but they and the firemouths WILL breed
1 lima shovelnose catfish
1 clarias catfsih
1 anectens lungfish
a couple of "dragon eels" really called senegal bichirs
or
like 5 silver dollars
a bunch of barbs and tetras and danios and stuff
some cories
bristlenose pleco
or a bunch of different african cichlids

everybody will possibly say "blue" fish, yet i'm quirky and could say new fish, or crimson fish smoked fish,or crimson fish cooked fish, final yet no longer least crimson fish stunk like fish!

well if you plan on getting a large tank, youd need time to devote to it. bigger tank do require a little bit more work.
what size do you plan on getting?
once i know this, i could have a couple different stocking options for you!

goldfish live a long time and can live with each other easily. they look really cool, too. if you have a really really big tank like you say you do get koi. or you could get just a largemouth bass and feed it live mice and goldfish!! im not kidding its been done.
