1. I found this place on the net called the "party spot" that has a VERY elaborate cake that I know you will love: http://www.partyspot.com/odb/PhotoDetail.aspx?id=8175&pageIndex=8&
2. You could also have a cake made to your liking and go to the Disney, Hot Topics, or Spencer's stores and buy Nightmare Before Christmas figurines to use as toppers.
3. Get a Nightmare Before Christmas picture, shrink it or enlarge it and print it out and take it to a Raley's Supermarket. The bakery has an edible paper they use to make a copy of your picture to place on top of the cake of your choice.
4. I found this cake, with Jack and Sally, that seems pretty straight forward to make at Photobucket. I thought this might give you some idea: http://photobucket.com/mediadetail/?media=http%3A%2F%2Fi129.photobucket.com%2Falbums%2Fp224%2Fcrsam%2Fcake.jpg&searchTerm=cake%20nightmare%20before%20christmas&pageOffset=1
5. This is a square cake with just Jack if this is more to your liking instead of the duo, also found at Photobucket: http://photobucket.com/mediadetail/?media=http%3A%2F%2Fi32.photobucket.com%2Falbums%2Fd23%2FfDaUiSrTy%2FPicture225.jpg&searchTerm=cake%20nightmare%20before%20christmas&pageOffset=2
6. This is the last and easiest to make which is just Jack's face also found at Photobucket: http://photobucket.com/mediadetail/?media=http%3A%2F%2Fi40.photobucket.com%2Falbums%2Fe203%2FWachMyselfDiie%2FThe%2520Nightmare%2520Before%2520Christmas%2FDoms008.jpg&searchTerm=cake%20nightmare%20before%20christmas&pageOffset=5
I hope these ideas are along the lines of what you were looking for.

How about you forget the nightmare before X-mas theme and go with a CurlySue theme and have a great big picture of me on it?? LOL. No? ok i understand if you did that no one would want to eat the cake becuase it's so beautiful! HAHAHA
How about just a Jack Skellington cake? Like the whole cake is shaped as his body etc..... I get a piece of his head!!!!!

I took two metal mixing bowls and baked two half circles, I iced them together and held them up off the cake dish with a small cardboard circle base. I iced it to look like jack skellington. it was 3D. It looked real good. My friends were impressed. I also did a lot of drawings from the movie and used them for decorations. If you are not that talented you can print pictures from the Internet for decorations.
Also create unusual foods like wrap hot dogs in strips of croissant dough and bake them to look like mummy hot dogs. I have a book with halloween recipies, you could look them up on line. You can make deviled eggs that look like bloodshot eyeballs. Also make a punch and float plastic spiders in it. I keep halloween decorations for this type of celebration. I had a Nightmare Before Christmas party for a friend of mine.

Make it in the shape of Jack Skellington's head. There are decorators that can scan any image, print it out, and place it on a cake as an edible decoration.

Red velvet cake, with white icing, with black and red piping over the white, maybe draw little bones all over, or a simple skeleton. Just FYI- black and red food coloring has a bitter taste, and you have to use a LOT of it to get good dark colors. Try to use just accents of red or black. But it would be a fun cake!
