They're for picking small solids(usually in a powder form) that can be harmful or corrosive to your skin.
Or because its just easier to pick powder up with a spatula rather then with your fingers...

Don't ever let yourself get caught up in sciency terms. A spatula has a million uses. Folks mentioned using them to mass out solids but think of them as basically a stick. What could you use a stick for? Scraping compound of the side of a round bottom flask, prying things open, reaching things that have fallen in small places. The spatula is very versatile!

Perhaps the most creative thing I've done with them is use them as tent stakes. They worked perfectly in pretty high winds!
