You should ask them immediately, send an email tell them they won and you will ship it as soon as you receive the payment.
My first win I thought I had paid but I did something wrong in paypal and didn't know until the seller said he wasn't paid.
Last thing I won I went to paypal and paid it but then sent the seller a email saying I won and I paid now send me my stuff, Before I was even done writing he wrote to tell me I won to pay now. Then sent me an email saying my winning was on the way.

send the buyer an email asking to confirm payment sent...that's proper etiquette. I buy on EBAY all the time (in fact just this past week I bought 2 tickets)... when I won I sent the seller an email stating WHEN I would send the payment and HOW and then I sent him an email after I sent the payment and when he could expect to receive it... Some buyers send money orders through regular mail which, depending on how far across the country the buyer and seller are from each other--could take a WEEK to receive the payment maybe MORE.... so I would write the buyer an email and just ask for confirmation that payment was sent. oh and whenever I buy I ALWAYS send the emails the same way---especially the one directly after I have sent the payment...... a good seller will be quick with all replies and so should a good buyer.

Send them an invoice, and check to see if they've indicated a payment method other than paypal (like sending a check or money order). Check under "View Order Details" on the drop down menu in the "Items I've Sold" section; if they have indicated an alternate payment method, it will be shown just above your seller address as "Payment Method". If you get no communication, give them 7 days and then contact them to tell them you are reporting them as a non-paying bidder. Give them a day to see if they respond. If not, report them as a non-paying bidder. You then have to wait another 7 days to get a credit for the item you listed.

Most people give a time limit of a week, others might extend it to the next weekend (pay day) But thats really up to you, personally I wouldn't wait longer then 2 weeks. Also keep in mind that if they are paying with a money order, snail mail is pretty slow.

The other answer is pretty much right on...You can't do anything about it until a week or two passes, regardless of what you wrote in your ad. It helps to put down something in your ad but regardless of what your ad says, you have to follow eBay rules which you will find in their TOS. You didn't say if you had been in communication with them or not? What did they tell you? If you had no communication from them that increases the chance you are going to get stiffed. Over the years I have heard about every story you can imagine.

I normally just asked if I didn't receive the payment after 3 days the auction ended. Just say that the item is ready for shipping so if you could please pay so I could ship it right away. Good luck.
