Well, in the case of US and Canada, that's a result of treaties for the western states, and the existing colonial boundaries for the eastern states and provinces. In most cases, easter borders were defined by natural land features, most commonly rivers.
With regard to Mexico, the borders are the result of land purchases and transfers between the counties. So they are defined in the land sales contracts. Between Mexico and Texas, the border is defined by the river.
But ever wonder why the western borders (states and international) tend to be so square and straight lines? Easiest way to define them in legal documents.

For Canada its simple... When your colonization of the west began, we began to build railroads to colonized the west too, so our border is pretty much flat all the way to the west, but since Quebec and New-Brunswichs were much older than the rest of Canada, the border at this area is irregularly shaped!
As for Mexico, well you get some troubles with Santana army, then you win, then you annex, then you got your new southern frontier!

The canadian border is a leftover from the colonial era. The Mexican border is a result of America invading mexico to gain land to build the trans continental railroad.

it was what our gov. wanted and we had the power from our armed forces to take it.or something like that. with Canada I think it was 54/40 or fight. and with Mexico. Sam Houston went to war in 1836 something and run Mexico out of Texas. 1836 is when Texas declaration of independence was made.[ remember the Alamo' ] " it was also Sam Houston birthday"

they were esstablished through out the different wars. dif land, and dif countries owned dif parts. it all depends on what time period ur lookin at.
