For feeding your trout, I would suggest manufactured trout chow. It will be available at most Seed & Feed type stores. A few crayfish might make a good addition to the pond to help clean the bootom and of course the trout will eat very small crayfish as well.

If you are using native fish for your pond I would suggest you also use native plants. That will make a nice mix and help prevent doubts as to their ability to survive winters.

Minnows purchased at a bait store are great additions to a trout pond. Since this is one of their natural foods. Crayfish are also a great addition. Worms, and bugs are also a natural food for your trout. Pond pellets are a good source, however when it comes to trout ponds, stick with the natural foods. Pond pellets are a good general all around food. If you check the neutrient list against Trout chews it is the exact same thing only cheaper.

As far as plants, cattails, milfoil (not exotic) water chestnuts (I am not talking about the plant that is the edible water chestnut used in Asian cooking. Water chestnut is a member of the Trapaceae family and derives its name from the single-seeded horned fruits, the "chestnuts." Each of the four horns on the nut is sharp and has a spine with several barbs. Each plant has two types of leaves: submerged leaves that are feather-like and oppositely paired along the stem, and waxy floating leaves that are triangular and form a rosette on the water's surface. The petiole (leaf stalk) of the floating leaves has a bladder-like swelling filled with air and spongy tissue which provides buoyancy. Cord-like plant stems can attain lengths of up to 16 feet so they need to be kept trimmed.

All three of these are native to New Hampshire and are easily found around the water ways.
Floating plants like water lettuce or water cress are also great additions to the pond and your fish will nibble on them as well. They will also give minnows a chance to out run the trout and perhaps give them a chance to breed.
