Sunday to Wednesday during the week. Summertime is cheaper than winter because it's SO hot there. The two weeks before Christmas are also cheaper - but someone else who said it was right, from the day after Christmas until the end of January are among the most expensive. (NYE is a big deal, and there's a huge convention the entire month of January)

In the spring and fall (stay away from vegas in dec prices are jacked up high especially around new years eve)

Sunday through Thursdays are the cheapest for hotel & airfare, as long as there are no conventions in town...

check with your airline or maybe a travel agent. try expedia.com. normally its cheaper to go on Sundays, sometimes with a connecting flight.
