I have used all major oil brands (Mobil, Pennzoil, Quaker State, etc.), last one being Shell, and even up until 3k oil change, the oil isn't all that darker than when I put it in. I've got 121,000 miles. Is this normal?

It is not abnormal, my Honda wiht 210,000 miles does not foul the oil noticably. A clean running engine in proper tune that has been properly maintained does not have much inside to cause oil fouling until the rings start leaking quite a bit.

its a sign that the car is running good, the inside of the engine is clean, and you don't have much, if any blow by.
