The Mafia was and is all about organization. You have a team of about 5 people who are your street men. They go out and start looking for new ways to make money. Some of the old way [1920-1930's] have died out but most are still around today. There income is like this [in a typical extended family business with about 30 people]
1- Drugs. In control of not only dealers but the buyers to. Anyone who doesnt wanna be seen driving to certain parts of the city can just stop by one of our shop/ houses. Anywhere from 300,000 to 1,000,000 anualy
2- Prostitution. Not just streetwalkers, strippers too. About 200,000 anualy
3- The shops which they protect. 10% off the top baby!! Anywhere from 200,000 to 400,000
4- Gambling. Is dying out as it moves more and more to Vegas. But if you arent afraid of operating out side of NY/NJ then millions. If youd like to stick to our territory, 100,000
5- And finaly Real Estate. You can lose hundreds of thousands or make millions. It all depends on how smart your street team and Consigliere are.

A lot of ways have been explained in above answers. Have not seen anyone mention hijackings yet though, which is a huge one. When you think Hijackings, you usually think expensive government equipment, or something, but these guys had men on the streets who would hijack anything then sell off the swag. When you hear "warehouse of hot items" this is what they are referring to.
The truck is unloaded into another truck, moved, etc etc. Swag gets moved a few times usually while they look for buyers.
If they hijacked a refrigerated truck full of seafood, they could move it to local supermarkets who would pay below market prices under the table, but still make a killing. Then they would usually have fixed up the truck with paintjobs and new markings so they could sell the truck, or dumped it if they could not find a buyer.
It was not just food. They would steal ANYTHING. Even a truck full of regular pharmacy items like razorblades, Canned Coffee, Jeans, suits, Stereos, etc(Read Donnie Brasco and Unfinished business. Agent Pistone's version of his time with the mob undercover).

the mafia would make money off of unions by taking part in union affairs or making a deal with the union leader.. ever hear of jimmy hoffa? he was the president of the teamsters union. he had mob connections where part of the teamsters funds would go to the mob.
there are also other ways that the mob makes money. one is loansharking (money is given to anyone but the money is to be paid back with a large interest rate). there is also bootlegging (not as big as was during prohibition), gambling
the mob deals with narcotics, tho not directly. the mob requires drug dealers to pay them a percent of their profit in return for being able to sell the drugs on mob territory. this way the mob makes a profit off of the narcotics trade but doesn't have to directly deal with the drugs themselves. (john gotti broke this rule when he was the leader of a street crew)
the mob also uses extortion and soething called ghost payrolling. extortion is protection money. the mob is paid a specific about everyso often and the mob will leave the business otherwise untouched. ghost payrolling is when someone is on the payroll of a company but the person in question doesn't actually exist.
skimming is another source of profit, tho i don't know how they do it in modern times.. mobsters in the past could walk into a casino vault, grab some money, and walk off with several thousands of the casinos profit

Besides running illegal businesses (loan sharking, gambling ) they also lean businesses and unions or create their own - by corrupting government people they can get extra money on contracts and deliver shoddy products bought cheaply or can dump products that honest businesses have to pay to get rid of.
Businesses with high cash flows get cash skimmed off up front by threats, etc.
