It's out of Babylonian tradition.
Constantine renamed all the Babylonian religion characters with names from Christianity. Simeramis became "Mary, mother of God", Tamuz became "baby Jesus" etc. All the events on the Babylonian Calendar were renamed with Christian names, Tamuz birthday on Dec 25th became "Christmas", Easter is a Babylonian name and the bunny with eggs is a fertility thing.

Because chickens dont have paws to carry them and they are too tired from laying all those eggs. Plus Bunnies are much cuter! ;P
