I've been there 3 times this year already (all on work), and almost 8 times in total. I'm going alone, and want to explore some not-so-touristy ways to spend time, mostly in the evenings...

Go on any one of the London Walks tours in the evenings. They all start near a tube stop, and they have everything from a "Ghosts of London" walk, to a "Jack the Ripper" walk. I've done half dozen and the guides are brilliant, and the price is phenomenal for what you get.

Go to the bathing ponds in Hampstead Heath..
Feed the squirrels in any of the parks, they're very friendly.
Visit Greenwich Maritime Museum. Not only is it a beautiful building its pretty interesting too. You could have seen the Cutty Sark at the same time if some nobs hadn't set fire to it.
If you can get up early enough Billingsgate market is worth a visit. Probably the only place you can get a seafood breakfast - should you fancy one!!
Take a walk along the South bank, if it's a Friday or Saturday Borough market is a must for foodies - heaven!
Also Hays Galleria has the most amazing sculpture.
St Katherine's docks can easily take up an afternoon too. All sorts of boats from old barges to new massive cruisers. Great atmosphere there too.
