If you want to tie with three strings you mostly tie three strands together with a thumb knot, but you can also fold one double and tie one around that.
Of fold one double, make a loop with a thumb knot and add the third one into the same knot.

If you want to work with six strands, you use three strands double, you can start with two strands and add a third whenever you want.
