I know when you are installing a door or window in a house or building a frame you have to make sure it is all squared out. If everything is perfectly square...then what does plumbing it do or why is it necessary?

Squaring the door or window makes sure that the vertical members are perfectly perpendicular to the horizontal members. Very important.

Plumbing makes sure that the horizontal members are level and the vertical members are "plumb" or perfectly perpendicular to level.

If you square the opening but do not plumb it, the frame would be perfectly square but the top, bottom and sides may not be square and plumb. If the opening is square but not plumb, all of the sides will be off by the same amount. It will not allow the door or window to operate properly over a long period of time and will cause excessive wear.

A window can be square without being plumb. You can install a square on a 45 degree angle. If it is not plumb, the window will not open properly. Plumb is straight up on the sides.

Plumbing a door means that it is aligned vertically. The reason you must do this is so that the door has a constant reveal around the top, bottom and sides. The straight and constant reveal allows the door to close evenly, the bolt will catch the striker, and weather stripping will be more efficient.

Some older contractors like myself will put a "ghost" on the outside doors. Not all people know this, or the younger carpenters.
A "ghost' Is a ever so slight incline that allows the door to almost close on itself if moved properly. If you hold the door and leave it go it will stay but, if you move it toward a closed position it will keep moving until closed "ghost" not all carpenters do this.

"Plumbing" a door or window is no more than making sure it's straight in it's verticle alignment.
