If it is carved in stone it can not be changed.Refering to the 10 Commandments of Christianity ,they are carved in stone and not able to be changed.

something you carve in stone won't be easily worn out, deleted, erased, or forgotten; it's something meant to last.

likewise with the idiom: if someone tells you to "carve in stone" his emotions, words, or expressions, don't forget it.
