IMHO the best "value" buffets are
Main Street Station - L,D
Boulder Station - B,L,D
Orleans - L,D
Palace Station - B,L,D
Fremont Seafood Buffet - Sun/Tue/Fri
LV Hilton - D
Fiesta Henderson - L
Bellagio's buffet is very good, but also very expensive.
The Mirage buffet is also very good, and a lot more reasonable in price.
If you want the absolute best, "money is no object" then try the Sterling Brunch at Bally's. It's an awesome spread.
The breakfast buffet at Paris is very good, but again, very expensive. IMHO both Boulder and Palace Station have far and away the best value breakfast buffets.
Someone mentioned Silverton - I was just there for 12 nights, take my word for it their buffet is average at best. The only reason it's so busy is that they mail out free buffets to all of the locals to draw them in. Silverton is a great place, but their buffet needs to improve a bunch to be considered one of the best.
Rio was also mentioned - 10-15 years ago I would have agreed, the Rio "Carnival World Buffet" was the best in LV. This has not been true for many years now, it's good, not great and it's expensive for what they serve.
The absolute best deal on a buffet is on Fremont St - The FSE office is located on the second floor of the parking garage next to Walgreens(425 Fremont) Show an out of state ID and they will give you a sheet of coupons. One of which is a 2-4-1 coupon for the Main Street Station Buffet, already the best value buffet in LV it's tough to best two lunch buffets for $8 or two dinner buffets for $11. Also included on the sheet, are a 2-4-1 Fremont buffet coupon. $10 free play coupons for Binions & the Golden Nugget, plus a few more coupons.

We go to LV 2-3 times a year for 2 weeks or more at a time and have for over 20 years. We just returned home from a month long(6/4 - 7/5) stay in LV. We prefer to eat at a buffet over a restaurant because of the variety. If you have a Q on anything LV feel free to e-mail me through YA..

Yeah the Bellagio is really nice but also try the one in the Venetion. You might want to see the shows at treasure island as some of them are really good. Just look around and I am sure you will find what you are looking for!

the Rio has what they call the worlds biggest buffet, it is very good with a lot of differant food that you may want to try and would normaly wouldn't see any where ,If you like to see freebies, the water show at the Bellagio is great the pirate show at treasure island.

The Wynn has one of the best buffets in the city, and unless they've changed the promotion, you can get it for free. If you're going to be playing slots, get a "Red Card" (their player's card). With the first 50 points you accrue, you get a free buffet for two (about a $70 value). My companion and I both got cards and once she accumulated 50 points on hers, she used mine and accumulated 50 more points. We had the buffet two nights in a row. Very nice: prime rib, crab legs, etc.

The travel channel rates the buffet at the RIO #1, I have not been there but been to others and they were good. You must see a Cirque show while in Vegas. We saw KA at MGM it was great, we also saw Mystere at Treasure Island and it was good also but my recommendation is KA. Have FUN!!!

Treasure Island is good for lunch buffet. Never ate there for dinner. The sharks at one of the hotels is supposed to be awesome. The tigers at the MGM are cool too

The buffet at Harrahs is excellent.
Go see the sharks at Mandalay Bay, it is worth the visit.
It is called the Shark Reef by the way.
