V8 is a healthy juice made from vegetables and spices. It is better for you than other drinks. So when they say, "I should've had a V8" they're angry at themselves for not choosing a healthy and tasty juice drink.

It's an old television commercial for V8 Tomato Juice.
He (the actor in the commercial) just gets done drinking another type of drink ,i.e, pop or cola of some kind then pops himself in the head and said, "Gee, I could have had a V8"!which would had been a more healthy drink and just as refreshing as colas.
V8 (not the # of cylinders in your car engine) is made from 8 different vegetable juices. Try some it's really good!

The expression, as answerer number 4 suggests, has evolved into meaning more than "Oh, could've had V-8 instead of OJ." Though I'm sure Nicola Brown Simpson would CERTAINLY agree...
It means there was a better choice [in general] available to me, and I chose the lesser in value/benefit...
It's a slogan turned phrase in the U.S. of A., and a good one at that.

It could be the vegetable thing like the others said; but it could also mean that you bought a v6 model of a muscle car (mustang or camaro) and you realize you want more power, hence, I could've had a v8. Just a different interpretation.

the true meaning of the expression is when a person comes to the realization that they should have made a better decision in comparison to the latter, or prior decision they ve made. It applies well to the sloganeering V8 used to try to wean Americans off sodas in exchange for a healthier alternative that still has a satisfying taste.

ell, it either means that the person suddenly realizes that they should have imbibed in a glass of V-8 cocktail juice (made with lots of vegetables) or they realized that their 4 or 6 cylinder engine was just not powerful enough to sustain them on the highways and byways of our fair land! (Actually, it's the vegetable juice thing --- really!) (Oh, and It's "I Could've had a V-8!)
