No, not the singer (unless you have a killer meat loaf recipe). I'm looking for ideas to put in my meat loaf other than tho old true blue ingredients of crackers or bread crumbs and Lipton's onion soup mix. It's getting old, and I want to kick it up a notch.

frozen tater tots then when you cook it they cook and its super good. Or using ranch dressing mix instead of lipton's onion soup mix. Or putting salsa in it. Good luck!

This is a great recipe.

1 C Italian Bread Crumbs
2 Eggs (slightly beaten)
1 C Onion, diced
2 Lb Lean Ground Meat
1 Stalk Celery chopped
1 Tsp Parsley Flakes
3 Cloves Garlic, diced
1 Tsp Dried Basil
1 Tsp Dried Oregano
2 Tsp Black Pepper
1 Pinch Salt

Sauce: 8 Oz Tomato Sauce
2 Tbsp Brown Sugar
1 Tbsp Balsamic Vinegar
1 Tsp Dry Mustard
1/4 C Red wine
1/8 C Soy Sauce
1/8 C Worcestershire Sauce

Mix all ingredients together with 1/2 the sauce.
Blend well. Pat mix into 9 in. loaf pan.
Spread remaining sauce over top of meatloaf.
Bake at 375 for 1 hour.

Add chopped Red and or green peppers, mushrooms, celery. Even chopped carrots. Some Ketchup on top. In the summer I prefer BBQ sauce on top. Put bacon on top of everything.
Put a tangy tomato glaze on top: 1 can (14 ounce) + 2 Tablespoons each of: white sugar, brown sugar, and cider vinegar + a dash of Worcestershire sauce + 1 sm chopped onion, simmered together for five minutes to dissolve the ingredients. (play with amounts to go from tomatoey to sweet which kids like)
Replace some of the hamburger with ground pork. I like Bob Evans sausage.
I like Ritz Crackers or oatmeal as the expander.

One of my families favorites is Mexican meatloaf. Add some spicy tomato sauce ( I've even used Rotel) or chopped tomatoes and layer it in a baking dish. It will be less firm than usual but that's OK. Cook about 30-45 minutes at about 375. Drain the excess fat. Then, mix a can of Mexican corn with some Velveeta or other cheese and add some taco type spices. Layer this on top of the meatloaf and cook another 20-30 minutes. Serve with chips and Spanish rice or salad and you have a great meal.

Try crushed Doritos (nacho flavor) or pretzels in place of crackers. Throw in some onion and ground zucchini or a dab of horseradish. We found a recipe one time that called for smashed kidney beans (called Bean Loaf) which we liked real well but then we tried the chili beans and that was better. My best friend likes Chinese noodles in her meat loaf for the crunch but I don't. Experiment with your barbecue sauces, mustards, and worchestershire sauces and see what you can jazz up. And of course, there's the good old standby: pork, turkey or ground chicken to supplement the ground beef.

I use oatmeal rather than bread or crackers. It's healthier. After trying dozens of recipes, I went back to the Oatmeal recipe on the side of the box. Bottom line. It's meat loaf whether you add olives to the mix or bacon strips on top. I serve mine with barbeque sauce on the side or in place of the tomato sauce.

chopped onion, chopped green pepper , one egg and small pieces of american or cheddar cheese and oatmeal. i make my own sauce, it's basically ketchup with a smidge of mustard and brown sugar. i add it about fifteen minutes before it's done and cook it enough to let it carmelize. you don't want to burn, but you need it to carmelize. you'll love it. i serve it with mash potatoes, and corn. it's even better the second day for lunch as sandwiches cold. also, it's best to use a real meatloaf pan. it's shaped like a bread pan with a tray in the bottom with holes. the tray allows the grease/oils from the meat to drain as it cooks, so you aren't eating all that and the meat tastes better. it just lifts up out of the pan and the fat will be left under the tray in bottom of the pan. good luck ... you will love it.

Oatmeal and it's good for you!

OATMEAL MEATLOAF

1 c. tomato juice
3/4 c. Quaker oats
1 egg
1/4 c. chopped onion
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 lb. lean ground beef

Preheat oven to 350 degrees. Combine all ingredients except ground beef. Mix well. Add ground beef, mix lightly but thoroughly. Press into 8 x 4 inch loaf pan. Bake 1 hour. Drain, let stand 5 minutes.

HINT: This better when it's refrigerated then re-heated.

OATMEAL MEATLOAF

1 lb. hamburger
1 egg
1/4 c. ketchup
1 tsp. Worcestershire sauce
2 tbsp. finely chopped onion
2/3 c. oatmeal
1/2 c. stock or water
Salt and pepper
Poultry seasoning

Mix egg, ketchup, Worcestershire sauce, onion, salt, pepper, and poultry seasoning. Stir in stock or water. Mix in hamburg and oatmeal. Pack into a well greased loaf pan. Bake about 1 hour at 350 degrees.


You can also shred carrots and put in it. Can't hardly tell they are there.

Put in real onions chopped finely bell peppers,mushrooms two garlic cloves also chopped finely Fry these together and drain into a cup save the juice. make your normal recipe using these ingredients before putting in the oven pour on the juice.
(If you mix the juice with other ingredients it will not hold together well this way you still get the flavor)

My dad puts some green peppers, and red spices (like the ones you put on pizza) in his meat loaf, and it is a good spicy way of changing it up a bit...he also puts a sauce on the top of, kinda like ketchup, but spicier, and then puts it in the oven to cook and it makes a really good crust for the top...yumm!

Use an equal amount of oatmeal in place of crackers. Then instead of ketchup & onion soup mix, a couple T of taco mix and some salsa. You can mix some shredded cheese into it, too.

Also try BBQ sauce instead of ketchup for more zip.
