A female friend of mine was approached by a guy who is in the adult film industry and asked if she was interested in being in a film. It made me start to wonder why is it illegal to to pay for sex from a prostitute, but if you pay her to have sex on film it is an adult film and that is ok? How do you differentiate between the two from a legal stand point? What is to keep the police from arresting adult film stars for prostitution?

Because the actors are not being paid to have sex. They are being paid to act, and voluntarily have sex.
It's an odd distinction, granted. But the actors get paid whether it's real sex or just looks (on the screen) like sex, so the sex itself is not a requirement of the contract.
Just like it's not illegal to hire someone to be your date, and then voluntarily have sex. As long as the contract itself does not require sex as an element, it's not prostitution.

pornography is not illegal because of freedom of speech, meaning that it has a redeeming quality of art, or so the courts have determined. it is different in that pornography is seen as art and prostitution is purchasing sex. both film starts are paid in the production of pornogrpahy, where as only one is paid for prostitution.

Because according to the law, you're getting paid to have CONSENSUAL sex filmed for other people's pleasure, not for the act of sex itself. It's kind of a narrow distinction, but that's what it is.
